Description

Spiced Punjabi chickpea curry served hot with soft Super Kulcha Bread - a classic North Indian street favourite.

Ingredients 13 items
  • 1.5 cups kabuli chana (soaked overnight)
  • 2 tea bags + 1 bay leaf
  • 2 onions (chopped)
  • 3 tomatoes (pureed)
  • 2 tbsp ginger-garlic paste
  • 2 tbsp chole masala
  • 1 tsp red chilli powder
  • ½ tsp turmeric
  • 1 tsp garam masala
  • Salt, oil/ghee
  • Coriander to garnish
  • 4 Super Kulcha Bread
  • Butter to toast
Instructions 7 steps
  1. Pressure cook soaked chana with tea bags, bay leaf, salt and water - 4 whistles.
  2. Heat oil, saute onions till golden. Add ginger-garlic paste.
  3. Add pureed tomatoes, chole masala, chilli powder, turmeric. Cook till oil separates.
  4. Add cooked chana + 1 cup stock. Simmer 10-15 minutes.
  5. Sprinkle garam masala. Adjust salt and consistency.
  6. Toast Super Kulcha with butter on a tawa till lightly golden.
  7. Serve hot chole topped with onion-tomato-chilli with toasted kulcha.
